Hashrate is the combined computational power so that miners can mine and process transactions on a blockchain using proof of work as currently done in Bitcoin.

To add a new block the miners must compete to guess one more number. Miners try to produce a hash that is equal to or less than the target hash by changing a single value called "nonce". It would be like the lottery ticket system where everyone is unique with their own set of numbers.

As each hash is random, millions of them may be needed before the goal is met and a miner earns the right to fill the next block and add it to the blockchain. The winner receives a reward for the newly minted block of coins along with any fee payments tied to the transactions stored in the new block.

What is it for? The hashrate is a metric that allows analyzing the strength and security of a blockchain. The more honest miners there are, the higher the hashrate and the less chance they will have of being attacked by hackers. Although not impossible.

Mining difficulty determines the complexity miners face in producing a hash that is below the target hash, and is achieved by reducing the numerical value of the block header.

The more miners there are online, the more hashrate and guesswork you get. The more guesswork, the more likely the correct hash will be discovered quickly. Since blockchains are generally designed to add blocks (and release new coins) at a constant and predictable rate, the difficulty is programmed to adjust automatically after a specified number of blocks, in order to maintain that constant rate.
