This vegan dinner is possible if you shop your items at your closest 99 cents only store.
For this vegan dinner, you will start in the produce section, as these will be your main ingredients. You'd want to get: carrots, celery, and mini bell peppers to serve with your appetizer. A head of cauliflower for the entree. Also, include yellow potatoes, cremini mushrooms, garlic, shallots, butternut squash, Brussels sprouts, Honeycrisp apples, and lemons.
You will also need oats, olive oil, some spices, cornstarch, beans, and olives. So if you don't already have those at home, make sure to grab some.
All of these items are, usually, at 2 for 99 cents. Some might be 1.99 tops, but nothing is over that price range. Quite good, huh? So, the menu:
Entree: roasted cauliflower steaks
Simply slice the cauliflowers into "steaks", rub them with olive oil, minced garlic, salt, and pepper. Place them on a baking sheet lined with parchment paper. Put them in the oven for 40-45 minutes, flipping mid-way. You can also add some Brussel sprouts and butternut squash for some roasted veggies side dish.
You can absolutely match these steaks with a quick batch of this delicious easy vegan gravy.
Main side: mashed potatoes
Simmer your peeled potatoes along with some garlic cloves. Once tender, drain the potatoes, but reserve a cup of the cooking liquid. Mash the potatoes, add some olive oil, and, little by little, the cup of the reserved liquid, until you get the desired consistency.
