"In today’s video we are making vegan fast food! Still possibly healthier than ordering takeout! Peanut Butter Falafel Sandwiches, Chipotle Style Burrito Bowls, Vegan Churros and Loaded Crispy Baked Fries. You're welcome.

Ingredients:

#1 Peanut Falafel Sandwiches

Falafels:

1 can chickpeas, rinsed and drained (420g)

1 small red onion

2 cloves garlic

A handful of fresh parsley

1 tbsp peanut butter or tahini

½ tsp cumin

1 tsp smoked paprika

a pinch of chilli flakes, or to taste

salt to taste

1 tbsp white wine vinegar

4 tbsp corn starch + more to dip the falafels in later

+ extra frying oil

*makes about 12 Falafels depending on size

*someone pointed out that the temperature was a little too high here - make sure it's not smoking!

Peanut sauce:

1 onion

1 clove garlic

1 tsp oil for frying

chill flakes, optional

1 cup peanut butter

¼ cup veggie broth (60ml), more if needed

1 tbsp lemon juice, more if needed

Sandwiches:

4 pitas

the falafels

peanut sauce

sliced tomato

red onion rings

greens

Serves 4.

#2 Loaded Crispy Baked Fries

Fries:

~ 8 medium sized yellow potatoes

enough water to cover the potatoes

1 tbsp vegetable oil

a generous pinch of salt

1 tsp smoked paprika

Tofu Crumbles:

1 block firm plain tofu (200g)

1 onion, finely minced

1 clove garlic, finely minced

a handful of parsley, finely chopped

2 tbsp soy sauce

1 tbsp mustard

1 tbsp white wine vinegar

salt, pepper to taste

2-3 tbsp cornstarch

1-2 tsp oil for frying

1 tbsp sweetener (raw sugar, agave)

1 more tbsp soy sauce

Vegan Burger Sauce:

1 tbsp ketchup

1 heaping tbsp vegan mayo

1 tbsp white wine vinegar

→ make more if desired!

additional topping ideas: tomato, red onion, fresh herbs, sesame seeds, peanuts, red beans, sriracha etc. …. options are endless!

Serves 2-3.

#3 Chipotle Style Burrito Bowl

1 red bell pepper

1 onion

1 clove garlic

1-2 tsp oil for frying

1 tsp smoked paprika

salt, pepper to taste

chipotle powder, optional (very spicy)

½ tsp cumin

1 tbsp ketchup

½ can black beans (220g), or more if desired

a handful of cherry tomatoes

a vegan meat substitute, optionalcooked rice

shredded lettuce

guacamole lots of guacamole

parsley

tortillas

#4 Homemade Vegan Churros

1 Tbsp vegan butter

¼ tsp salt

1 tsp vanilla

½ cup + 2 tbsp water (150ml)

1 cup + 2 tbsp all purpose flour (150g)

⅓ cup + 1-2 tbsp non dairy milk (80ml + 1-2 tbsp)

+ frying oil

cinnamon sugar: 5 tbsp raw sugar, 1 ½ tsp cinnamon

melted dark chocolate

Serves 4 people.
