Making the last Taco Bell Mexican pizza at home

Mexican Pizza is two crispy flour shells layered with beans, seasoned beef, pizza sauce, tomatoes and melted three cheese blend.

Taco Bell serves a variety of Mexican inspired foods that include tacos, burritos, quesadillas, nachos, novelty and specialty items, and a variety of "value menu" items. It serves more than 2 billion customers each year at 7,072 restaurants, more than 93 percent of which are owned and operated by independent franchisees and licensees.

The Mexican pizza has been on the menu at Taco Bell for at least 30 years and has a bit of cult following. It consists of a flour tortilla shell filled with refried beans, seasoned ground beef and Mexican sauce. Another tortilla shell is placed on top and finished off with Mexican sauce, cheese, and chopped tomatoes. It can also be ordered without beef for a vegetarian version.

Ingredients you'll need:

Mexican Pizza Sauce (enchilada style):

6 ancho chilies

5 guajillo chilies

3 roma tomatoes

1 onion

5 cloves garlic

1 tablespoon fresh oregano

3 tablespoons oil

1/4 cup white vinegar or acid of choice

1 tablespoon (14g) panela grated

Salt to taste

Beans:

3tbsp (42g) unsalted butter

1 onion

4 cloves garlic

2 jalapeños

2 cans black beans

1.5 cup chicken stock

Salt and pepper to taste

Ground Beef:

1 lb ground beef

3 cloves garlic

1 tablespoon soy sauce

seasonings/spices of choice (chili pepper powders work great here)

salt to taste

Assembly:

1 cup grated cheddar

1 cup grated Monterey jack

2/3 cup crumbled cotija cheese

pickled red onions

fresh cilantro leaves"
