Applebee’s copycat Fiesta Lime Chicken

This tasty Tex Mex dinner idea is really tasty and very easy to make. And, it also doubles as an excellent meal prep for easy lunch!

This recipe is inspired by Applebee’s Fiesta Lime Chicken, but it has a little twist: this Tequila Lime Chicken features baked chicken, whereas the original Fiesta Lime Chicken features grilled chicken.


•    4 chicken breast cutlets (or 2 chicken breasts sliced in half lengthwise)
•    2 tbsp olive oil
•    2 tbsp tequila
•    2 tbsp lime juice
•    2 tsp chili powder
•    1 tsp cumin
•    1/2 tsp salt
•    1 tsp lime zest
•    4 cloves garlic, minced
•    1/2 cup shredded tex mex cheese

Mexican rice

•    1 cup dry white rice
•    2 cups chicken broth
•    1 tsp butter
•    1 tbsp chili powder
•    1 tsp garlic powder
•    1 tsp onion powder
•    1 tsp cumin
•    1 tsp paprika
•    1/2 tsp salt

Options for topping

•    Pico de gallo or salsa
•    Chopped cilantro
•    Jalapeno slices
•    Tortilla strips
•    Lime wedges
•    Sliced avocado

1.    Preheat oven to 425 F.
2.    Mix all ingredients for the chicken marinade together and let marinate with chicken in a Ziploc bag or bowl for 15-20 minutes. Meanwhile, make rice by adding all ingredients to a rice cooker.
3.    When chicken is ready to cook, add to a parchment-lined baking sheet and bake for 10 minutes. While chicken is cooking, prep toppings.
4.    Remove chicken from oven and top with grated cheese, then bake another 10 minutes until cheese is melted and chicken is fully cooked.
5.    Top chicken with toppings of choice and serve with Mexican rice. Enjoy!
